Janie and Jack

Let me start off by saying that Janie and Jack makes the most beautiful children’s clothing I’ve ever seen. Hands down! I just love the classic and timeless look of their line. The quality seriously blew me away when I first opened the packages they sent us. The attention to detail is just amazing, even in the way the items were packaged in matching sets. I cannot say enough good things about this company! Their clothes are of outstanding quality and made to last! Here is a sneak peek at a few of the gorgeous outfits we received!

I mean, c’mon! That faux fur collared coat, and the scalloped hem dress?! I can’t even deal. Now if only all these outfits came in my size!

The adorable little shoes are both genuine leather, and the material of the sweater dresses is so thick and soft, which is perfect for our long winters here in New England! It’s so hard to pick my favorite outfit, but I’m probably going to have to say the outfit with all the rose gold details. HOW CUTE?! This is going to make the most adorable Valentine’s Day outfit ever. The ivory scalloped hem dress is sold out, but they do have it in a tank version in navy blue! If you love the look of that outfit though, just substitute the ivory dress for the ivory bow sweater dress! A few of the accessories have also sold out, but they have so many other gorgeous options! I will link each of the items still in stock below so you can easily find them on their site!

One of the things I love the most about their site, is that each time you click on an item to view, it gives you suggestions to ‘complete the look’ below it, making shopping effortless! They also just added a ton of adorable clothes for Spring, and have some great finds in their clearance section as well, so be sure to look around, you wont be sorry!

Stocking Stuffers!

Christmas is ALMOST here! I’m getting so excited for Mila to really experience Christmas this year, and I’ve almost caved and given her so many of her gifts already! Stockings have always been one of my absolute favorite parts of Christmas! As a kid I remember waking up suuuuper early on Christmas morning, I’m talking like 2:30a.m. and we would find our stockings laid out on the foot of our beds, and get to open them right then and there. They were always STUFFED with the best goodies. The rule was we had to stay in our rooms and not wake up the other siblings or parents until they woke up on their own, and we could just stay in bed and play with our tiny stocking gifts until then. Genius, right?! Keep the kids entertained for a while, and let Mom and Dad get a few extra hours of sleep. Needless to say, this is definitely a tradition we will also be doing with our family! So, here are a few ideas for last-minute stocking stuffers for him, her, and your toddler too! Enjoy!

  1. I get Myles a new winter hat, usually from Timberland almost every year, because he loses them, can never find one when he needs one… you get the point.
  2. We recently got an Amazon Echo Dot during Black Friday and LOVE it, so I thought this would be a perfect little gift for really anyone.
  3. I also get Myles a new pair of gloves almost every year for the same reasons already mentioned! But, I usually try to switch it up between nice “driving” gloves that he can wear to work, warm ones for being outside, or actual work gloves. I usually find them somewhere like Reny’s or L.L. Bean.
  4. I put fun socks in Myles’ stocking every single year as well. He wears suits to work, so he loves wearing fun socks, or coordinating them with the rest of his outfit. I usually get them at Burlington Coat Factory, but I actually saw them in the Target Dollar Spot this year, 3 pairs for only $3!
  5. Tie clips! Because this is another item that seems to always go missing in our house, and he wears them to work five days a week! You can find them on Amazon, at Burlington Coat Factory, or T.J.Maxx/Marshall’s.
  6. A new tie…because ketchup, BBQ sauce… I usually also get these at Burlington or T.J.Maxx because they have quality name brand ties for really cheap!
  7. Okay now this is actually something I just recently found out about when they were kind enough to send us a package, but Scentbird is a great gift idea for him or her! I feel like people think it’s only for women, but they have designer colognes for men too! It’s a monthly subscription and they send you a new scent every month! Myles wears cologne every day and he would LOVE this because at any given time he has about a half-dozen different colognes going! It’s more than enough to last the whole month, it’s not just a tiny sample size.
  8. I have a similar mug to this that Myles actually put in my stocking last year, and I bring it to work with me every day, and it keeps my coffee warm literally all day.
  9. Beard oil because nobody likes a scratchy harsh beard.

Some other stocking stuffers (the less fun ones) I usually include are…

  • Sriracha or another hot sauce
  • Beef Jerky
  • Protein Bars
  • Thin mints (my mom puts this in my dad’s stocking every year!)
  • Gum
  • Deodorant
  • Razors
  • Chapstick
  • Hand sanitizer
  • Nips of their favorite liquor, if they drink
  • Cigars if that’s their thing
  • Body wash
  • Loofa in the toe!

Ladies, just go ahead and show your guy this list now, and save yourselves both the headache haha!

  1. I just recently bought myself my first Morphe palette, and was blown away with the quality in comparison to the price point. You can’t go wrong. The one pictured is not the exact one I got, which was sold out when I made the image, BUT they just put it back in stock today, so I linked it.
  2. I’ve been wanting this scent for a few years, and I have a tiny trial size of it that I wear occasionally, and get compliments on it every single time! I don’t get to wear perfume enough to make it worth buying the whole bottle, and to be honest, I just threw out half a bottle of Chanel perfume that basically went bad because I had it for so many years. So from now on, roller balls it is!
  3. This is my all time favorite blush, and for literally $1 more than what it cost all the time, you can get an amazing full size bronzer and travel size mascara in this set at Ulta! What?!
  4. This book is a must read!! If you haven’t read it yet, ask for it for Christmas, or just buy it for yourself. It would also make a GREAT gift for someone else too!
  5. Another genius and affordable subscription, BootayBag! This is a great gift idea to give yourself, or a busy, tired, new mom who won’t make the time to ever do something nice for herself. OR to save your boyfriend or hubby the embarrassment of trying to pick out underwear for you. It’s right up there with buying tampons.
  6. Okay. This body butter trio from Trader Joe’s is AMAZING! One of my coworkers introduced me to the Coriander one, and I immediately went and bought it. It smells like heaven and I would bathe in it if I could… if I ever even showered. Hence the next item…
  7. Dry shampoo is life, the end. If you haven’t tried this brand, do it.
  8. I also added the Echo Dot onto the gift guide for her because, everyone needs one.
  9. Smartwool socks are my faaaavorite! My parents get us these almost every year and they are just so so comfy and warm. This is another one of those gifts I actually look forward to. Another (way less warm) option would be the Target Dollar Spot 3-pack for women for only $3!

A few of the other less fun ideas for “Her”…

  • Candy/Chocolate
  • Bath bomb
  • Mini bottle of bubbly
  • Jewelry (some fun earrings!)
  • Candles
  • Nail Polish
  • Cotton rounds
  • Chapstick
  • Hand sanitizer
  • Deodorant
  • Body wash
  • Razors
  • Eye cream
  • Loofa in the toe!

Other than a few bigger items, I usually fill Mila’s stocking with pretty basic/cheap things from like the Dollar store, just because at this age they really don’t know the difference. But here are a few fun items that are practical, and that your toddler won’t outgrow or be over with in like a week.

  1. Piggy Paint! I am in love with these, and Mila is finally getting to an age that she is taking interest in things like this! I especially love that they are “natural as mud” and non-toxic for your littles.
  2. This cup strap from Nuby has been a serious life saver (or germ saver)! I even use them for snack keepers, and her little stuffed animals that she sometimes insists on bringing with her into public.
  3. I am in love with this stainless steel 360 cup from Munchkin, and that it can keep drinks cold or warm for hours. This will be fun to use with some warm hot chocolate while playing outside in the snow!
  4. I am putting some teethers in her stocking this year because she’s been chewing on her hands lately, and is cutting some pretty big teeth. This one from Nuby seems fun and easy for her to hold. Teething is one of those things, just when you think you’re passed that stage, they start again.
  5. I got Mila a few different sets of flashcards from Dollar Tree, with shapes, colors, and numbers/letters that I thought would be a fun thing for her to grow into.
  6. Mila has loved these food pouches that Fruigees sent us, and they also make perfect and healthy stocking stuffers, as opposed to junk food. I put food pouches in her stocking last year too!
  7. These foam bath toys from Nuby are fun at any age! Bath toys get pretty gross after a while, so it’s good to switch them out often, plus it keeps bath time fun!
  8. Snack keepers are just a must for toddlers, and you can even put their favorite snack inside for a fun surprise! Plus my dogs seem to always find them and get the covers chewed in under 30 seconds so we go through a lot of these.
  9. We recently introduced these washable paints to Mila and she is obsessed with them! I under prepared for the mess, and they ended up on my rug and on the walls, and it washed RIGHT off with no trouble! So these are a win!

Some other items I’m including in her stocking this year, but that aren’t pictured are…

  • Double sided crayons from the Dollar Tree
  • A mini maraca
  • Costume Play jewelry
  • Hair bow
  • Bubble bath
  • Bath Crayons (Mila loves her’s from Nuby!)
  • Socks (because baby/toddler socks vanish even quicker than adult ones)
  • Some play dinosaurs from Dollar Tree
  • Stuffed animal to peek out the top
  • Apple in the toe!

The majority of these items I didn’t link, only because I got them from places like Amazon, or I wrote where it’s from in the description. If you have any trouble finding an item that isn’t linked, certainly let me know either by email or DM on Instagram, and I will gladly help you find it!

I hope you all enjoy the Holidays with the people you love about most!

Toddler Gift Guide

Ahh, it’s getting down to crunch time for Christmas shopping! We are keeping it pretty simple and mindful for Christmas gifts this year for Mila because she already has so.many.toys that she hardly ever plays with! My goal was to get things that she will  *hopefully* use for years to come, and that target a larger age group developmentally. So I would say this gift guide can really be for kids ages one to four or five.

toddler gifts.jpeg

  • This teepee is going to go in the corner of Mila’s room as I start to transition her room from a ‘nursery’ into a toddler room. It will make the cutest little reading nook!
  • This KidKraft Play Kitchen is going to be Mila’s big Santa gift, and I choose this one over the more ‘modern’ KidKraft one because this one is considerably taller so I feel like it can be used for many more years. So if you have an older toddler or school aged child, this is the way to go.
  • We already have this step stool, but it’s a must for toddlers. Mila uses it every day to wash her hands and brush her teeth! I like that it isn’t a total eyesore in our bathroom. The exact one we have is sold out in white, but here’s another one.
  • These interactive Melissa and Doug food sets are so great for toddlers, even if you don’t have a play kitchen. They help with learning and motor skills, plus are just a lot of fun, so you can’t go wrong!
  • These bead mazes are just a classic. Mila got this one for her first birthday but is really just starting to love and play with it all the time now. These are made by many different brands, I just love the quality of Melissa & Doug toys.
  • We already have this plush animal chair, and Mila is OBSESSED. She uses it every single day, named it Ella, and even tries to feed it! Haha! The best part is the cover comes off so you can throw it in the wash!
  • This xylophone is another toddler classic. We actually don’t own one of these yet, so I will be getting her one for Christmas! My parents have some musical toys at their house and she plays with them all the time!

Processed with MOLDIV

I was going to include these items in a future post about baby shower gift ideas, but they are just too good to wait! These seriously just make the best gifts ever, whether it be Christmas, a birthday, or baby shower!

  • The Little Girl Who Lost Her Name is a personalized book by Wonderbly that highlights all the letters in Mila’s name, which has the most adorable story line and also helps her learn her name! They make lots of different books and themes to choose from, personalize it, and even have ones you can customize with all their favorite foods/activities. This is just such a great gift to give a kid at any age, for any occasion, and would make the sweetest gift for a baby shower as well.
  • This mermaid bath set from Baby Aspen is just the cutest! I can’t wait to see Mila strutting around in her mermaid towel at the beach this summer! They also have a ton of other adorable bath sets, bathrobes and baby gift sets, and can also personalize them!
  • Basic Baby Co. sent us this beautiful book bundle and it might be my most favorite gift idea yet. It comes with all of the classic books that are a must have in any child’s book collection; the ones we all grew up reading, and hopefully kids will be reading for generations to come. Reading at any age is so so important for development and starting them off with this collection of books would be such a special gift. They also have a ton of other “bundle” gift sets, wrapped beautifully and ready to gift. How much easier could gift giving get?!

I hope this gift guide gave you some ideas for the littles in your life, and made your Christmas shopping a little easier!

Cozy Christmas PJ’s!

One of my favorite family Christmas traditions growing up is getting Christmas Pajamas! Every year, my parents give us Christmas PJ’s on Christmas Eve to wear to bed and lounge in on Christmas Day! Even now that we are all adults, we still get them after our annual Family Christmas Eve party, and it’s STILL something I look forward to every single year. You can’t go wrong with comfy new PJ’s! So this year, I thought I’d round up a few of my favorites, and if this isn’t already one of your Family’s traditions, maybe now it will be! 🙂

image1 (3).jpeg

First up are these ADORABLE Bear Cheeks Plaid Flapjack Onesies from LazyOne! They make matching sets for the whole family in lots of different patterns, and even have them for dogs. I can’t even! They were kind enough to send us a set for the whole family this year, and I am obsessed! They are so comfy, even my husband loves them! These are so perfect for Family photos or Christmas Cards!

I bought these for Mila and I because I just love the poinsettias, and the fact that we can twin in them! They aren’t exact matches, but pretty darn close! I love that they are Christmas-y without being tacky, and can still be worn well after the Holidays!  The women’s set is from Target, and is soo comfy, and the toddler set is from Old Navy.

These Buffalo Plaid pants are from Old Navy, and I seriously love their pajamas bottoms. I have a pair that my parents got me last Christmas, and I still wear them ALL the time. They are so comfy and hold up really well in the wash. I also got one of their thermal tops to wear with them!

Can you tell I’m obsessed with Buffalo Plaid this year?! These Men’s pants are from Target, and I will be wrapping them up for Myles on Christmas Eve! I got our matching pants from two different places because the Old Navy ones were actually red and charcoal, not black, and my OCD couldn’t deal with that.

The pajama set we got Mila to contrast our Buffalo Plaid pants is now sold out, but it is an adorable fair isle print onesie. Here is another idea from Target, with a similar fair isle print, and they actually make matching ones for the whole family too!

I hope you got some ideas from this post if you’ve been on the hunt for cozy Christmas PJ’s! There’s just something about lounging in cute pajamas all day. It makes me feel comfortable and cozy, but not like a total bum. Definitely a must-have for the cold winter months!

Give me all the cozy sweaters!

With all the Black Friday deals at some of my favorite retailers, I figured I’d put together a post of all my favorite cozy sweaters. I for one, will be living in them all winter. So here’s my round-up…

The sweater I’ve basically been living in from Target. It’s on sale right now for $25. You wont ever want to take it off, and its way cuter in person!

I’ve also been eyeing this one. It’s only a matter of time…

…And this one

…I’ve also had this one in my Target cart forever, and with this sale I’m probably going to have to get it. Damnit Target.

I got a similar burgundy chenille one from Burlington recently and its so comfy and cozy, it’s like wearing a sweatshirt but it makes you look like you actually tried. It’s also on sale right now for only $20!

product photo
This one is from Old Navy and it’s on sale for only $20.  It also comes in a pretty wine color, and would be perfect with leggings

Here’s another dupe of a Burlington one I recently got that I am OBSESSED with. I just feel like you could easily through on OTK boots and some chunky jewelry to dress this one up for the Holidays!

This sweater comes in a few colors, and would look cute with leggings! It’s also on sale for only $15!

Here’s another super cozy looking one for a great price! I’m loving this fuzzy  look dressed up for the Holidays!

The thing I love most about all these sweaters, is you can easily dress them up or down and get so many different looks for whatever occasion you need. You can also totally throw them on with leggings to go run errands. My favorite way to dress them up is with some statement jewelry, and no/low heel over the knee boots. It instantly makes it look like you tried, when really you didn’t, and you can still chase a toddler around in them. I bought my OTK boots at the end of the winter last year on clearance at Marshall’s, for like under $30 but if you don’t want to wait for the end of the year sales, here’s a great dupe at a reasonable price.

As always, hope you enjoyed this post!

Fall Mommy & Me Outfits

I was laying out some outfits for our fall family photos recently, and figured I’d share a few ideas in case anyone is having a hard time picking out a theme. These are more fall themed than holiday, but you can easily swap out colors for red or burgundy to make it more festive. For the flat-lays, I only did mommy and me ones, mostly because I feel like guys are just way easier to dress. Throw a flannel, thermal or sweater on them with jeans and you’re good. If you are struggling with what your guy should wear for your family photos though, I’d be more than happy to give you some ideas!

  • My sweater is Knox Rose from Target, found here
  • This hunter green “Luxe” T-shirt from Old Navy is my all time favorite basic T, I have it in white as well which is the best white T I’ve owned to date. They only have a few random colors and sizes left but I guarantee they bring it back this spring/summer so keep your eyes peeled!
  • The locket was my grandmothers.  This amazing shop has a similar one, and can also make the most beautiful custom portraits to go inside. They are booked for the holidays, but this would make the BEST gift to any mom, grandmother etc!
  • Steve Madden suede booties honestly, I got these at the end of last winter for like under $15 at Burlington Coat Factory, which is pretty much how I get all my fall boots, but I’ve linked the closest pair I can find. If you are patient though, go to places like Burlington, TJ Maxx or Marshall’s in the early spring/late winter and you will find something for CHEAP!
  • Mila’s dress and sweater are both from Old Navy, her booties were from Wal-Mart, and I made her scarf.

image2 (1)

  • My scarf I actually bought at the Gift Shop at the hospital I work at
  • Hi-low ribbed tee is from Forever 21
  • My jeans are American Eagle
  • Mila’s poncho is from Bailey’s Blossoms, and that is one of my favorite shops for baby clothes! They have the cutest stuff, and the prices are very reasonable!

  • My utility jacket is from byBECK and I’m obsessed with it. I had been looking high and low for literally a year for a similar jacket that wouldn’t break the bank and this is it! It was less than $30 shipped, and I love the gold hardware.
  • Mila’s utility jacket was from Old Navy but is sold out, so here’s a similar one
  • Her shirt is also from Old Navy.

  • My blanket scarf is from last year and I actually got it at Five Below for $5. No joke. I haven’t been back yet this year to see if they have them again but you can also find similar ones at Old Navy.
  • My shirt is from last year as well, and I got it at Burlington Coat Factory, here is a similar one from Old Navy, and it’s that same Luxe material as my favorite T.
  • My boots are from LLBean and can be found in my LLBean Must Haves post!
  • Mila’s dress and sweater are from Old Navy
  • Her boots I got on clearance at Wal-Mart, and I bought them in a few sizes to stock up!

image1 (2)

  • Mila’s shirt is a thermal from Old Navy, and I also got her a printed one. They seem to run kind of small, so definitely size up!
  • Her shoes are Carter’s but I actually got them at our local Marden’s. It’s always hit or miss but I’ve found some AMAZING deals on Carter’s apparel for her there. We’re talking like $5 for an entire outfit or fleece pajamas.
  • My leopard flats I believe were from either TJ Maxx or Marshall’s, but attached is a similar Steve Madden pair. Leopard flats are a fall staple year after year so you wont regret buying a pair if you don’t already own some!

I’m sorry I wasn’t able to link everything because honestly I’m such a bargain hunter, and I do most of my shopping at places like TJ Maxx, Marshall’s, and Burlington Coat Factory. I just love that you can get high-end brands for a fraction of the price! This at least will give you some ideas and style inspiration even though you can’t shop all the links, so you can be on the hunt for something similar! Hope you enjoyed this post!

L.L.Bean Must Haves!

L.L. Bean is having a 25% off sale right now with code 25OFF, which literally never happens!! It ends 11/14, so I thought I’d make a post of some of my all time favorites! It was almost impossible to only list a few, because I just love everything they make, especially their outerwear. You just can’t beat the quality, and their customer service and return policy is top-notch as always! I mostly did women’s wear, but they basically have the same items in men’s, kids, etc. Their sale even includes their infamous Bean Boots, so if you’ve been wanting a pair, NOW is the time to grab some!

Processed with MOLDIV

Can you tell I love their pullovers?! I’ve linked everything below from left to right:

Processed with MOLDIV

On to footwear. Again I mostly did women’s here, but NOW is the time to stock up for the whole family with this sale! You won’t be sorry!

  • Wicked Good Shearling-Lined Slides I’m obsessed with their Wicked Good Slippers, I have a few pair, and these are next on my list to try!
  • Men’s Wicked Good Moccasins If your hubby doesn’t already own a pair of these slippers, these are the perfect gift idea, he will LOVE them! Myles gets a new pair every year or so from my parents, and it’s always one of his favorite gifts!
  • Women’s Wicked Good Shearling Boots I’ve had a few pair of these over the years, I’ve also had Uggs and these are just as good, if not better!
  • Bean Boots, Shearling-Lined Again, NOW is the time to grab your Bean Boots if you’ve been wanting a pair! They are just an all around versatile boot, and the quality is top-notch! They will last you forever.
  • L.L. Bean Wellies Rain Boots, Ankle I just recently purchased these after eyeing them for like a year, and I LOVE them! They’re so cute I even wear them when it’s not raining!
  • L.L. Bean Classic Clogs Okay, if you are a medical professional, these are a must-have. I have owned a few pair of Danskos, and they always hurt my feet, so I tried these several years ago and have worn them ever since! Plus they’re like half the price! They actually discontinued them a few years ago, and just finally brought them back recently and I am so happy they did!

It was so hard choosing just a few things to feature for this sale, because I could buy the entire store either for myself or as gifts for others. So go grab whatever you’ve had your eyes on now before the sale ends, because they honestly don’t have sales this good very often!

Favorite Eats

I thought I would share few of our favorite go-to meals… you know, the ones that everyone asks about at work! 😉 Be sure to let me know if you try any of them, or if you have any suggestions for us to try! And as always, my recipes are Gluten-Free but you can certainly tailor them to fit your needs.

Butternut Squash and Spinach Lasagna

  • 10 oz Lasagna noodles (I used GF)
  • 2-3 cups cooked butternut squash puree
  • 1 cup cooked spinach
  • 1 lb lean turkey burger (the recipe I followed did not call for this, but I added it to please Hubby)
  • 1/2 cup milk
  • 2 1/2 cups shredded mozzarella
  • 1/2 cup parmesan cheese
  • 2 cups ricotta
  • 1 tsp minced garlic
  • salt, pepper, italian seasoning to taste.

  1. Preheat oven to 375 degrees, lightly grease 13×9 pan with olive oil spray.
  2. Cook lasagna noodles per box instructions
  3. Brown turkey burger with salt, pepper, italian seasoning, garlic to taste.
  4. Prepare spinach filling:
    • Combine 1 cup cooked spinach (drained well), 1 cup ricotta cheese, 1 cup mozzarella, 1 tsp minced garlic, salt, pepper, and parsley to taste, mix.
  5. Prepare butternut squash filling:
    • Add 2 cups butternut squash puree (cook squash either fresh or frozen until soft, blend with either milk or water until desired consistency), add 1 cup ricotta cheese, salt and pepper, mix.
  6. Spread approx 1/3 of the butternut squash filling on the bottom of the pan, sprinkle lightly with mozzarella, top with a layer of cooked lasagna noodles.
  7. Spread half of spinach filling over the noodles, sprinkle with turkey burger, sprinkle with mozzarella cheese, then top with another layer of cooked lasagna noodles.
  8. Spread another 1/3 of the butternut squash filling, sprinkle lightly with mozzarella, top with layer of cooked lasagna noodles.
  9. Spread remaining spinach filling over the noodles, remaining turkey burger, sprinkle with mozzarella cheese, and top with final layer of cooked noodles.
  10. Spread remaining butternut squash filling over this final layer of noodles, sprinkle with parmesan cheese, and remaining mozzarella (approx 1/2 cup).
  11. Generously sprinkle top with salt, pepper, and italian seasoning to taste.
  12. Cover the dish with foil and bake for 30 min. Remove foil and bake for additional 10 min.
  13. Let sit to cool, serve.

Sweet Chili Shrimp Pizza

  • Pizza dough (we use Portland Pie Company dough because its local, found in the deli section of the grocery store, I use GF Basil flavor)
  • Thai sweet chili sauce
  • Shredded cheese, I generally use Mozzarella or Italian Blend
  • Broccoli cut up into bite size pieces
  • Tomato cut up into bite size pieces
  • Cooked shrimp (small or medium)
  • Scallions

  1. Preheat the oven to 475 degrees, or whatever your dough calls for. You can also grill it if you prefer, which is actually the most delicious way ever!
  2. Prepare dough per package.
  3. Toss the cooked shrimp with sweet chili sauce.
  4. Lightly coat the dough with sweet chili sauce as you would normally spread regular sauce, more sauce will be a little spicier.
  5. Cover with shredded cheese to your preference.
  6. Evenly distribute the broccoli, tomato, and shrimp.
  7. Top with chopped scallions.
  8. Lightly sprinkle with cheese, salt and pepper to taste.
  9. Bake for 12-15 minutes, or per dough package instructions. Basically I just cook it until it looks done, I tend to like things more crispy.

Vietnamese Banh Mi

We eat this dish many different ways! Traditionally it is served on a sandwich which is so so good, but we also have it over rice as pictured, and even put it on nachos sometimes. It’s one of those dishes that you just can’t go wrong with, it’s delicious no matter how you eat it!

  • 1 1/2 lbs boneless/skinless chicken thighs, or pork
  • 2 tbsp lime juice
  • 2 tbsp brown sugar
  • 1 tbsp vegetable oil (we use olive oil)
  • 2 tsp soy sauce
  • 2 garlic cloves, finely chopped
  • salt and pepper to taste
  • Fresh cilantro
  • 1 large seedless cucumber, thinly sliced to fit your bun
  • 2 jalapeno peppers thinly sliced (optional)
  • French baguette, or bun of choice
  • Pickled Carrots:
    • 2 cups shredded carrots
    • 5 tbsp white vinegar
    • 1/2 cup white sugar
    • 1/4 tsp sea salt
  • Sriracha Mayo (optional)
    • 1/3 cup mayo
    • 2 tsp sriracha (or to taste)
    • 1/4 tsp soy sauce

  1. Prepare chicken marinade: combine lime juice, brown sugar, oil, soy sauce, garlic, and salt/pepper in a zip lock bag. Add chicken. Seal bag and coat chicken well. Refrigerate for 2 hours if you have the time, if not, just throw it all in the crock pot together.
  2. Prepare pickled carrots: combine vinegar, sugar, and salt in a bowl, stirring until sugar has dissolved. Add carrots. Set aside to marinate 1 hour. Drain when ready to serve.
  3. Put chicken and marinade in crock pot and cook on low for 4-6 hours. Pull apart.
  4. Prepare sandwiches: lightly crisp bun if you’d like, spread mayo on each side. Slice chicken and arrange on bottom bun, top with carrots, sliced cucumber and jalapenos (I leave them out, but Hubby loves them). Add cilantro sprigs and top bun.
  5. To serve over rice: prepare chicken on top of rice, add all the same toppings, minus the bun and mayo!

Enjoy! 🙂

Yummy Fall Treats

Just thought I’d come on here and share a few favorite fall recipes that I’ve been loving the last few weeks. If you didn’t already know, I’ve been eating Gluten-Free for about seven years due to gastrointestinal issues that I had been dealing with for several years prior, but I’ll spare you all the details. So, all of my recipes will obviously be Gluten-Free but can be easily tailored to fit your family’s needs! Also, I hardly ever measure anything when I cook, I just eyeball it, or tweak it as I see fit, so all of these measurements are just a ballpark guideline.

Pumpkin Chocolate Chip Cookies

  • 1 cup canned pumpkin
  • 1 egg
  • 1/2 cup vegetable oil (or cooking oil of your choice)
  • 1 cup white sugar
  • 2 cups flour (I used GF all-purpose flour)
  • 1 1/2 tsp cinnamon or pumpkin pie spice (I used a combo)
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp milk
  • 1 tbsp vanilla extract
  • 2 cups chocolate chips

  1. Preheat oven to 350 degrees, and line baking sheet with parchment paper.
  2. In a medium bowl, combine pumpkin, sugar, oil, vanilla, and egg.
  3. In a separate bowl, combine flour, baking powder, cinnamon, and salt.
  4. Dissolve the baking soda with milk and stir into the wet ingredients.
  5. Add dry ingredients into wet ingredients and mix well.
  6. Add in chocolate chips and stir.
  7. Drop spoonfuls of dough approximately 2 inches apart onto parchment paper.
  8. Bake at 350 degrees for 12-14 minutes, or until toothpick comes out clean.

Apple Crisp

  • 6 peeled apples, sliced or diced, however you prefer
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 3/4 cup uncooked old-fashioned oats
  • 1/2 cup flour (I used GF all-purpose flour)
  • 1 tsp cinnamon
  • 1/2 cup butter, softened
  • Optional: vanilla ice cream (a must in my book), or caramel sauce

  1. Preheat oven to 375 degrees, lightly grease 8×8 or 9×9 pan with olive oil spray.
  2. Line bottom of pan with peeled/sliced apples.
  3. In a medium bowl, mix flour, brown sugar, oats, and cinnamon.
  4. Add in vanilla, cut in softened butter, and mix well with fork until clumpy.
    • Side note: I actually doubled the “crisp” ingredients because that’s my favorite part, and I thought the ratio was perfect, but if you aren’t an extra “crisp” kind of person, keep them as listed.
  5. Sprinkle mixture over the apples.
  6. Drizzle with caramel sauce if you wish.
  7. Bake 30-35 minutes, until top is browned.
  8. Serve warm with vanilla ice cream.
  9. Prepare to binge eat until gone.

*** Sadly, I didn’t get a photo of the Apple Crisp because I was not patient enough to do so before digging in.***

Pumpkin Spice Energy Balls

  • 1 1/4 cups old-fashioned oats
  • 1/2 cup chia seeds
  • 1/2 cup chocolate chips (I used dark chocolate)
  • 1 cup roughly chopped nuts of your choice (I used almonds, and sunflower seeds)
  • 3 tsp pumpkin pie spice (I used a little extra because I’m obsessed with all things pumpkin!)
  • 1 tsp vanilla extract
  • 1 tsp of raw agave, or maple syrup
  • 1 cup pureed pumpkin
  • pinch of salt

  1. Mix oats, chia seeds, chocolate chips, nuts/seeds, pumpkin pie spice, and salt in a medium bowl.
  2. Add in vanilla extract, agave/maple syrup, and pureed pumpkin. Mix well.
  3. Roll into bite sized balls, and refrigerate over night to let the chia seeds absorb the moisture. This is one of those things that in my opinion, gets yummier the longer they sit (day 2, 3 etc), due to the chia seeds.

Be sure to let me know what you think, or if you have any fall favorites to share! Enjoy! 🙂
